Product Details

Style: Plata

Agave: 100% Blue Weber agave, aged 8 years

Production Method: Every piña is hand-harvested at a full eight years in the Sierra de Amula. It slow-cooks for 24 hours in traditional brick and stone ovens, then rests another 24 with the doors sealed, drawing out a deep, cooked-agave sweetness with a trace of earth.

The cooked agave is crushed two ways: beneath a volcanic-stone tahona for depth and texture, and through a modern roller mill for a clean, precise extraction. The juice ferments in open wooden vats, then is triple distilled in copper stills and finished with our proprietary triple filtration.

The result is a plata that's clear as glass and dark in character. It's soft on entry and crystalline, with a long, elegant finish.

Tasting Notes Nose: Cooked agave, white pepper, a trace of citrus peel. Palate: Round and soft. Roasted agave, vanilla, faint smoke and earth. Finish: Long and clean.

Serve: Neat, over a single rock, or with a twist of orange.

ABV: 40% / 80 Proof

Country: Mexico

Region: Sierra de Amula, Jalisco, Mexico
